Back from Roatan (Honduras)

It’s been a little quiet here at Ginger & Scotch and that’s because I’ve been away happily scuba diving my a** off in Roatan, part of the Bay Islands of Honduras.

The photo above was taken from the deck of our rented villa, overlooking our private plunge pool and Half Moon Bay.

I logged 11 dives on this trip and only 15 more to go until I reach 100 – woo hoo! Here’s a photo of a Queen Triggerfish that we saw on one of our dives:

The food on Roatan was so much better than I had imagined for a small island. From Thai to rotisserie chicken to local Honduran food – we ate ourselves silly the whole week. Here’s one of the local dishes we bought at a street stall:

I’ll be posting many more photos soon but am slowly trying to get back into the swing of things once I recover from P-M-E-S.

When I was 15 or 16, after returning from summer camp, I (jokingly) coined this term which stands for “Post-Major-Event-Syndrome.” Symptoms include: a lot of sighing, constant reminiscing about the awesome trip experience and all the new friends that were made, tiredness, sleeping more than normal.

Whether it is a real medical condition or not (or just trip exhaustion), today, I managed to turn on my computer and log on to WordPress for the first time in a week.

I’ve even skimmed through the hundreds of photos that I’ve taken and can’t wait to share them with you!
