I never got around to posting this photo from our summer in #Scotland. It’s now our annual tradition to stop at #DunbarHarbor to watch the #lobster boats ⚓️ come in -> then stroll over to the lobster shack and pick out fresh lobsters 🦞 and crabs 🦀 for lunch

The kids love watching the harbor seals at play and all the sea birds circling the fishing boats.
.
Once we get the lobsters🦞 home, we cook them in plain water, extract the meat out, and enjoy them with a simple dipping sauce of freshly squeezed lemon and cracked black pepper. No heavy oils nor butter so as not to overwhelm the delicate meat. Totally salivating 😋😋😋 right now thinking of this!

Rain 🌧 hail and thunder lightning ⛈ calls for a creamy rich homemade #tonkotsu (pork broth) ramen 🍜.
.
This was an impromptu meal inspired by all the unusual stormy 🌧 weather we’ve been experiencing. Roads and houses flooded, schools closed down, and work were cancelled.
.
Stuck at home, I walked to the corner grocery store, picked up whatever pork bones and veg they had on hand, and started the process of making this tonkotsu ramen.
.
Tonkotsu-style ramen 🍜 is my son’s favorite kind of ramen. He has been on my case to make it ever since this past summer when he had bowl after bowlful in the US. The creamy white broth comes from cooking pork bones for a very long time and releasing all the marrow within.
.
I started the broth 🍲 yesterday and today my son and I made the ramen noodles 🥢 from scratch. I love that he can make the noodles unsupervised now. Frees up my time to assemble the ramen 😁.

Our ramen toppings:
-pork patty
-shemiji mushroom
-fresh corn
-toasted sesame seeds
-grated ginger
-chopped scallions
-drizzle of mayu (burnt garlic oil)

We slurped our noodles while the weather alternated from partly cloudy to thunder and lightning to hail back to sunny and then back to thunder and lightning. It was perfect comfort food for the stormy weekend.

It’s raining ☔️ cats and dogs in Dubai. And I’m making my first ever batch of #tonkotsu (aka pork broth) #ramen. Because rainy weather calls for soup and noodles 🍜.

The broth is bubbling and gurgling at a high boil in order to get all the creaminess out of the pork bones that makes tonkotsu what it is.

Back in Dubai and searching for dedicated #ramen bars to satisfy my cravings.

Found one in #jlt called @DaikanRamen. The weather outside was hot and humid which challenged the A/C in this cute little restaurant.
.
Clockwise from top: Miso ramen with minced chicken; Shoyu ramen with chicken chasu; Spicy miso ramen with minced chicken; another Shoyu ramen with chicken chasu.
.
I enjoyed my bowl of Shoyu ramen as I drank every last drop and the noodles were thick and hearty - but would have preferred more toppings which seemed rather sparse.
.
Also worth ordering: chicken bao, gyoza, and karaage (fried boneless chicken).

Well after 2 weeks in Scotland indulging in fresh seafood, foostie cheese, and other Scottish delights, I suddenly found myself craving a big bowl of #RamenNoodles (and so were my kids!).
.
So at Heathrow airport, while waiting for our flight to Dubai, we stopped at Wagamama’s for a ramen lunch.
.
I ordered the Shirodashi ramen with slow-cooked pork belly (right). Wee Scotch decided on the Tantanmen beef brisket ramen and Li’l ginger went for the kids portion of chicken ramen. We devoured everything to the last drop. Yum.
